Method
Rice Gnocchi Preparation
Make the Dough
In a mixing bowl, combine glutinous rice flour, water, and salt. Mix until a smooth dough forms. If too sticky, add a little more flour.
Shape the Gnocchi
Divide the dough into small pieces and roll each piece into a log shape. Cut into 1-inch pieces to form gnocchi.
Cook the Gnocchi
Bring a pot of water to a boil. Add the gnocchi and cook until they float to the top, about 2-3 minutes. Remove and drain.
Pork Ragu Preparation
Cook the Pork
In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until soft. Add ground pork, cook until browned.
Add Flavor
Stir in soy sauce, gochujang, broth, and black pepper. Simmer for about 15 minutes until the mixture thickens.
Fried Garlic and Edamame Preparation
Assembly
Combine
Plate the gnocchi, top with pork ragu, and garnish with fried garlic and sautéed edamame. Serve warm.
