Method

Prepare the Pulled Pork

Cook the Pork

In a slow cooker, combine the pork shoulder, soy sauce, ginger, garlic, five spice powder, sugar, and water. Cook on low for 8 hours or until the pork is tender and easily shreds.

Shred the Pork

Remove the pork from the slow cooker, shred it with two forks, and return it to the sauce. Mix well and set aside.

Make the Dumpling Wrappers

Prepare the Dough

In a bowl, mix the all-purpose flour and salt. Gradually add boiling water, stirring until a dough forms. Knead until smooth, then cover with a damp cloth and let rest for 30 minutes.

Roll and Cut Wrappers

Divide the dough into small pieces and roll each piece into a thin circle, about 3 inches in diameter.

Assemble the Dumplings

Fill the Dumplings

Place a spoonful of pulled pork filling in the center of each wrapper. Fold the wrapper in half and pinch the edges to seal.

Cook the Dumplings

Steam the Dumplings

Steam the dumplings in a bamboo steamer or a steamer basket lined with parchment paper for about 15-20 minutes until cooked through.

Prepare the Topping

Combine Topping Ingredients

In a small bowl, mix the chopped scallions, chili oil, and sesame oil. Set aside.

Serve

Plate the Dumplings

Serve the steamed dumplings hot, topped with the chili oil scallion mixture.
