Prepare the Dumpling Filling
Mix the Filling
In a mixing bowl, combine the nduja sausage, shrimp, minced garlic, chopped green onions, soy sauce, sesame oil, salt, and black pepper. Mix well and set aside.
Make the Dumpling Wrappers
Prepare the Dough
In a bowl, combine the all-purpose flour and salt. Gradually add water while kneading until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.
Roll Out Wrappers
Divide the dough into small balls and roll each ball into a thin circle, about 3 inches in diameter.
Assemble the Dumplings
Fill the Wrappers
Place a small spoonful of the filling in the center of each wrapper. Fold the wrapper over to create a half-moon shape and pinch the edges to seal.
Fry the Dumplings
Heat the Oil
In a deep pot, heat the vegetable oil over medium-high heat until hot.
Fry the Dumplings
Fry the dumplings in batches until they are golden brown and crispy, about 3-4 minutes per batch. Remove and drain on paper towels.
Prepare the Ginger Mayo
Mix the Ginger Mayo
In a small bowl, combine mayonnaise, grated ginger, lemon juice, and salt. Mix well until smooth.
Serve
Plate and Serve
Serve the fried dumplings hot, drizzled with ginger mayo on top.
