Prepare Frites

Cut and Fry Potatoes

Peel and cut the potatoes into thick fries. Rinse in cold water and dry thoroughly. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Make Bravas Sauce

Cook the Sauce

In a medium saucepan, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened, about 3-4 minutes. Stir in tomato sauce, cayenne, paprika, and salt. Simmer for about 10 minutes to let the flavors meld.

Prepare Aioli

Mix Aioli

In a small bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix well until smooth.

Serve

Combine and Serve

Place the hot fries on a serving platter, drizzle with the bravas sauce, and serve with aioli on the side.
