Prepare Bone Marrow

Roast Bone Marrow

Preheat the oven to 400°F (200°C). Place the bone marrow in a baking dish and roast for about 20-25 minutes or until the marrow is soft and bubbly.

Once roasted, scoop out the marrow and set it aside in a bowl. Mix with a pinch of salt and pepper.

Prepare Lobster Filling

Mix Lobster Filling

In a bowl, combine the lobster meat, roasted bone marrow, pickled onions, and lemon juice. Mix well and adjust seasoning with salt and pepper.

Make Mustard Emulsion

Prepare Emulsion

In a small bowl, whisk together the Dijon mustard, olive oil, and water until smooth and creamy.

Assemble Lobster Rolls

Toast Buns

Lightly toast the hot dog buns in the oven or on a skillet until golden brown.

Fill Buns

Fill each toasted bun with the lobster mixture. Drizzle the mustard emulsion over the top and sprinkle with chopped chives.
