Prepare the Rice

If using leftover rice, ensure it is cold and grains are separated. Heat the vegetable oil in a large wok or frying pan over medium-high heat.

Sauté Aromatics

Add minced garlic and sliced shallots to the hot oil. Sauté for 1-2 minutes until fragrant.

Add Vegetables

Stir in diced carrots and green peas. Cook for another 2-3 minutes until vegetables are tender.

Combine Rice and Sauces

Add the cooked rice, soy sauce, oyster sauce, and sambal. Stir well to combine and heat through, about 5 minutes. Adjust seasoning with salt to taste.

Fry the Eggs

In a separate pan, heat a little oil and fry the eggs sunny-side up until the whites are set but the yolks are still runny.

Assemble the Dish

Serve the fried rice topped with fried shrimp, a fried egg, and garnish with chopped green onions.
