Prepare the Kimchi Rice

In a large bowl, combine the cooked rice, chopped kimchi, diced Spam, shredded mozzarella, soy sauce, salt, and pepper. Mix well until everything is evenly distributed.

Shape the Onigiri

Wet your hands with water to prevent sticking. Take a handful of the kimchi rice mixture and form it into a triangle or ball shape. Repeat until all the mixture is shaped. You should have about 8-10 onigiri.

Fry the Onigiri

Heat oil in a frying pan over medium heat. Once hot, carefully place the onigiri in the pan and fry until golden brown and crispy on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare the Fried Egg

In a separate pan, fry the eggs sunny-side up until the whites are set but the yolk is still runny.

Make the Spicy Aioli

In a small bowl, mix together mayonnaise and sriracha to taste. Add more sriracha for extra heat if desired.

Assemble and Serve

Place the fried onigiri on a plate, top each with a fried egg, a sprinkle of furikake, and a piece of nori. Drizzle with spicy aioli before serving.
