Prepare the Glass Noodles

Soak the glass noodles in hot water for about 30 minutes or until they are soft. Drain and set aside.

Prepare the Vegetables

Julienne the carrot, bell pepper, and zucchini. Slice the king oyster and shiitake mushrooms. Mince the garlic and chop the green onions.

Cook the Tofu

Cut the smoked tofu into bite-sized cubes. In a large pan, heat a tablespoon of sesame oil over medium heat. Add the tofu and sauté until golden brown on all sides. Remove and set aside.

Sauté the Vegetables

In the same pan, add the minced garlic and sauté until fragrant. Then add the carrots, bell pepper, zucchini, king oyster mushrooms, and shiitake mushrooms. Stir-fry for about 5-7 minutes until the vegetables are tender.

Combine Noodles and Tofu

Add the softened glass noodles and sautéed tofu to the pan with the vegetables. Pour in the sweet soy sauce and mix well to combine all the ingredients. Cook for an additional 2-3 minutes.

Finish and Serve

Remove from heat and garnish with chopped green onions and sesame seeds. Serve warm.
