Prepare the Ginger

Peel and grate the fresh ginger root finely.

Create the Sugar Syrup

In a saucepan, combine the grated ginger, granulated sugar, and 4 cups of water. Bring to a boil, then reduce heat and let simmer for 10 minutes.

Strain the Mixture

After simmering, strain the mixture through a fine sieve into a large bowl or pitcher to remove the ginger pieces.

Add Lemon and Yeast

Stir in the lemon juice, lemon zest, and yeast into the strained ginger syrup mixture. Mix well.

Ferment

Cover the bowl or pitcher with a clean cloth and leave it at room temperature for 24 to 48 hours, depending on your desired level of fermentation.

Bottle the Ginger Beer

Once fermented, carefully pour the ginger beer into clean bottles, leaving some space at the top. Seal the bottles tightly.

Refrigerate

Refrigerate the bottles for at least 4 hours before serving. This will stop the fermentation process.

Serve

Serve the ginger beer chilled. Enjoy it straight or as a mixer in cocktails!
