Prepare the Noodles

Cook the rice noodles according to package instructions, then drain and set aside.

Cook the Tofu

Cut the tofu into bite-sized cubes. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu and cook until golden brown, about 5-7 minutes. Remove and set aside.

Stir-fry Vegetables

In the same skillet, add the remaining tablespoon of oil. Add the broccoli, carrots, and bell pepper. Stir-fry for 3-4 minutes until just tender.

Combine Ingredients

Add the cooked noodles, tofu, spicy chili sauce, and soy sauce to the skillet. Toss everything together until well combined and heated through.

Garnish and Serve

Remove from heat and stir in the Thai basil. Top with crushed peanuts before serving.
