Marinate the Chicken
In a bowl, combine soy sauce, sake, mirin, minced garlic, grated ginger, salt, and black pepper. Add the chicken thighs, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes.
Prepare the Frying Setup
Heat the vegetable oil in a deep frying pan or pot over medium heat. You want enough oil to submerge the chicken pieces.
Coat the Chicken
Remove the marinated chicken from the refrigerator. Take each piece and coat it in cornstarch, shaking off any excess.
Fry the Chicken
Once the oil is hot (around 180°C or 350°F), carefully add the coated chicken pieces. Fry in batches to avoid overcrowding. Cook for about 5-7 minutes until golden brown and cooked through. Remove from oil and drain on paper towels.
Serve
Serve the chicken karaage hot with a side of spicy dipping sauce or your favorite dipping sauce.
