    Brown the Short Ribs

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the short ribs with salt and pepper, then add them to the pot. Brown the ribs on all sides, about 8-10 minutes. Remove the ribs from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are soft. Add the minced garlic and cook for an additional minute.

    Deglaze with Wine

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer and let it reduce by half, about 5 minutes.

    Stir in the crushed tomatoes, beef broth, bay leaf, and thyme. Return the browned short ribs to the pot. Bring to a simmer, then cover and reduce the heat to low. Cook for about 2-2.5 hours until the ribs are tender.

    While the sauce is cooking, prepare your pasta according to package instructions. Drain and set aside.
