Preparing the Short Ribs
Searing the Ribs
Preheat the oven to 300°F (150°C). Season the beef short ribs with salt and black pepper. In a large oven-safe pot, heat some oil over medium-high heat and sear the ribs on all sides until browned. Remove and set aside.
Braising the Ribs
Return the short ribs to the pot and add beef broth, Worcestershire sauce, bay leaves, and bring to a simmer. Cover and transfer to the oven. Cook for 3 hours until meat is tender.
Shredding the Meat
Once cooked, remove the ribs from the pot and let cool slightly. Shred the meat and discard bones and excess fat.
Assembling the Sandwich

Slice the French rolls in half. Butter the insides and place under the broiler for 2-3 minutes until golden.
Building the Sandwich
Fill each roll with shredded short rib meat, top with mozzarella cheese, and return to the broiler until the cheese melts.
