Chicken
Prepare the chicken
Cut the chicken breasts into bite-sized pieces. Season with salt, black pepper, and garlic powder.
Dredge the chicken
In one bowl, whisk the eggs. In another bowl, mix the cornstarch and flour together. Dip each piece of chicken in the egg, then coat in the flour mixture. Shake off any excess.
Sweet Chili Sauce
Mix the sauce
In a small bowl, combine sweet chili sauce, soy sauce, rice vinegar, honey, and red pepper flakes. Stir until well mixed.
Toss the chicken
In a large bowl, add the fried chicken and pour the sweet chili sauce over it. Toss until the chicken is evenly coated.
Toppings & Garnish
Prepare the toppings
Toast the cashews in a dry pan over medium heat for 2-3 minutes until fragrant. Thinly slice the cucumber and green onions. If making crispy wonton strips at home, cut wonton wrappers into strips and fry in hot oil until golden.
Garnish the dish
Top the coated chicken with sliced cucumber, toasted cashews, crispy wonton strips, and green onions.
Spicy Mayo
Make the spicy mayo
In a small bowl, stir together mayonnaise, sriracha, lime juice, and garlic powder until smooth.
Drizzle over chicken
Drizzle the spicy mayo over the assembled Cashew Chili Chicken just before serving.
