    Prepare the Beef Tongue

    In a large pot, cover the beef tongue with water. Add salt, peppercorns, bay leaves, onion, carrots, and celery. Bring to a boil and then reduce to a simmer. Cook for about 2 to 3 hours or until the tongue is tender.

    Make the Red Wine Sauce

    In a separate saucepan, combine red wine and beef stock. Bring to a boil, then reduce to a simmer and let it reduce by half to intensify the flavor. Strain the sauce to remove any solids.

    Prepare the Mashed Potatoes

    Peel and chop the potatoes. Boil them in salted water until tender, then drain. Mash the potatoes with butter and milk until smooth. Season with salt and pepper to taste.

    Cook the Vegetables

    Steam or sauté your choice of vegetables of the day until just tender. Season with salt and pepper.

    Make the Beet Chrain

    Grate the cooked beetroot and mix it with horseradish and sugar. Adjust the seasoning to taste.

    Slice the beef tongue and serve it on a plate with mashed potatoes, vegetables, and drizzle with red wine sauce. Serve the beet chrain on the side.
