Borscht Preparation

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and grated carrot. Sauté until the onion is translucent, about 5 minutes.

    Add Beets and Potatoes

    Stir in the grated beets, diced potatoes, and garlic. Cook for another 5 minutes.

    Add Broth and Seasonings

    Pour in the vegetable broth, add the tomato paste, salt, and black pepper. Bring to a boil.

    Simmer

    Reduce the heat and let it simmer for about 30 minutes, until the vegetables are tender.

    Add Cabbage and Dill

    Stir in the shredded cabbage and chopped dill. Simmer for another 10 minutes.

    Serve

    Ladle the borscht into bowls and top with a dollop of sour cream. Garnish with additional dill if desired.
