Make the Dough
In a large bowl, combine the flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms, then knead for about 5-7 minutes until smooth. Cover and let rest for 30 minutes.
Assemble the Vareniki
Roll out the dough on a floured surface to about 1/8 inch thick. Cut out circles using a round cutter. Place a spoonful of the potato filling in the center of each circle, fold over, and seal the edges tightly.
Cook the Dumplings
Bring a large pot of salted water to a boil. Drop the vareniki in batches, cooking until they float to the top, about 3-4 minutes. Remove with a slotted spoon.
Serve
Serve the vareniki hot, garnished with sour cream and fresh herbs.
