Dumpling Dough
Preparation
1. Make the Dough
In a large bowl, combine the flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms, then knead for about 5-7 minutes until smooth. Cover and let rest for 30 minutes.
2. Prepare the Filling
Peel and boil the potatoes in salted water until tender. Drain and mash. In a skillet, melt the butter and sauté the finely chopped onion until caramelized. Combine the mashed potatoes, caramelized onion, grated Asiago cheese, salt, and black pepper in a bowl.
3. Assemble the Vareniki
Roll out the dough on a floured surface to about 1/8 inch thick. Cut out circles using a round cutter. Place a spoonful of the potato filling in the center of each circle, fold over, and seal the edges tightly.
4. Cook the Dumplings
Bring a large pot of salted water to a boil. Drop the vareniki in batches, cooking until they float to the top, about 3-4 minutes. Remove with a slotted spoon.
5. Serve
Serve the vareniki hot, garnished with sour cream and fresh herbs.
