Toast the Caraway Seeds
In a dry skillet over medium heat, toast the caraway seeds for 2-3 minutes until fragrant. Be careful not to burn them.

Prepare the Vegetables
In a large bowl, combine the shredded cabbage and grated carrots.

Mix the Dressing
In a small bowl, whisk together the sunflower oil, apple cider vinegar, salt, and black pepper.

Combine Everything
Pour the dressing over the cabbage and carrots. Add the toasted caraway seeds and fresh dill (if using). Toss everything together until well combined.

Marinate
Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld.
