Preparation

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into even-sized sticks, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the potatoes and pat them dry with a paper towel. Carefully add a batch of the potatoes to the hot oil and fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, toss them in a large bowl with the fresh dill, minced garlic, and salt to taste.

    Serve

    Serve the Moscow Fries hot in a basket with your choice of dipping sauces.
