Preparation and Cooking

    Prepare the Cabbage

    Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Blanch for about 2-3 minutes until the leaves are pliable. Remove the cabbage and let it cool. Once cool, gently peel off 12 leaves.

    Make the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened, around 5 minutes. In a large bowl, combine ground pork, ground beef, wild rice (cooked), cooked onion and garlic, salt, pepper, and thyme. Mix well.

    Assemble the Rolls

    Place a few tablespoons of the meat mixture in the center of each cabbage leaf. Fold in the sides and roll tightly. Place seam-side down in a large baking dish.

    Prepare the Sauce

    In a separate bowl, mix together 2 cups of tomato sauce with a pinch of salt and pepper. Pour the sauce over the cabbage rolls in the baking dish.

    Bake

    Cover the baking dish with aluminum foil and bake in a preheated oven at 350°F (175°C) for 1 hour. Remove foil and bake for an additional 15 minutes.

    Serve

    Serve the golubtsy warm with a dollop of sour cream and a sprinkle of fresh herbs.
