    Make the Dough

    In a large mixing bowl, combine the flour and salt. Create a well in the center and add the eggs and water. Mix until it forms a dough. Knead the dough on a floured surface for about 10 minutes until smooth. Let it rest for 30 minutes.

    Prepare the Filling

    For meat filling: In a bowl, mix the ground meat, onion, garlic, salt, and pepper. For potato filling: Combine grated potatoes, cottage cheese, and chopped chives in a separate bowl.

    Form the Dumplings

    Roll out the dough on a floured surface to about 1/8 inch thickness. Cut out circles using a round cutter or glass. Place a small spoonful of filling in the center, fold the dough over, and pinch the edges to seal. Repeat until all dough and filling are used.

    Freeze the Dumplings

    Place the dumplings in a single layer on a parchment-lined baking sheet and freeze until solid. Once frozen, transfer them to a zip-top bag for long-term storage.
