For the Deruny
Method
Instructions
- 1
Prepare the Potatoes
Peel and grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
- 2
Mix the Deruny Batter
In a large bowl, combine the grated potatoes, finely chopped onion, eggs, flour, salt, and black pepper. Mix well until everything is well incorporated.
- 3
Heat the Oil
In a large skillet, heat the vegetable oil over medium heat until shimmering.
- 4
Cook the Deruny
Scoop about 1/4 cup of the potato mixture into the skillet for each pancake. Flatten gently with a spatula and cook for 4-5 minutes on each side, or until golden brown and crispy. Drain on paper towels.
- 5
Prepare the Caramelized Onion Relish
In a separate skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized, about 15-20 minutes. Stir in brown sugar, balsamic vinegar, and salt to taste.
- 6
Serve
Serve the warm deruny topped with caramelized onion relish, a dollop of sour cream, and a sprinkle of fresh herbs.
