Preparing the Pork Medallions

    Cook the Pork

    Season the pork loin with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the pork loin for about 4-5 minutes on each side, until golden brown. Remove from heat and let it rest before slicing into medallions.

Making the Sour Cream-Mushroom Sauce

    Prepare the Sauce

    In the same skillet, melt butter and sauté onions and garlic until translucent. Add sliced mushrooms and thyme, cooking until mushrooms are golden. Stir in sour cream and half of the grated Parmesan cheese, mixing until smooth. Let it simmer for a few minutes.

Preparing the Mashed Potatoes

    Make the Mashed Potatoes

    Boil potatoes in salted water until tender. Drain and mash with butter and milk until creamy. Season with salt to taste.

Cooking the Vegetables

    Sauté the Vegetables

    In a separate pot, steam or sauté mixed vegetables of your choice until tender.

Assembly

    Serve

    Arrange the pork medallions on a plate, top with the sour cream-mushroom sauce, and sprinkle the remaining Parmesan cheese on top. Serve with a side of mashed potatoes and vegetables.
