Prepare the Garlic-Dill Butter
In a bowl, mix the unsalted butter, chopped dill, minced garlic, lemon juice, salt, and black pepper until well combined. Shape into a log, wrap in plastic wrap, and refrigerate until firm.

Prepare the Chicken
Preheat your oven to 180°C (350°F). Take the chicken breasts and make a pocket in each by slicing them horizontally but not all the way through. Stuff each pocket with a piece of the garlic-dill butter.

Coat the Chicken
Dredge each stuffed chicken breast in flour, dip in the beaten eggs, and then coat with bread crumbs, ensuring they are fully covered.

Cook the Chicken
Heat oil in a large skillet over medium heat. Cook the chicken breasts for about 4-5 minutes on each side until golden brown. Transfer to a baking dish and bake for an additional 15-20 minutes until cooked through.

Prepare the Sides
While the chicken is baking, prepare the mashed potatoes and mixed vegetables according to your preferred method.

Serve the Chicken Kiev hot alongside the mashed potatoes and vegetables of the day.
