Method
Pork Belly Preparation

In a mixing bowl, combine the soy sauce, brown sugar, minced ginger, minced garlic, and Thai red curry paste. Mix well until the sugar dissolves.

Place the pork belly in a large resealable bag or shallow dish. Pour the marinade over the pork, ensuring it is well-coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 2 hours, preferably overnight.

Preheat your oven to 300°F (150°C). Remove the pork belly from the marinade and place it in a large oven-safe pot. Add 2 cups of water and cover with a lid or foil. Braise in the oven for 3 hours or until the pork is tender.

Once cooked, remove the pot from the oven and let the pork belly rest for 15 minutes before slicing it into bite-sized pieces.
Ginger Cabbage Slaw Preparation

In a large mixing bowl, combine the shredded cabbage, shredded carrot, grated ginger, rice vinegar, sesame oil, honey, and salt. Mix well to ensure all ingredients are evenly coated.

Honey Roasted Peanuts Preparation

Preheat your oven to 350°F (175°C). Spread the unsalted peanuts in a single layer on a baking sheet.
