Seasoned Sushi Rice

Seasoned Sushi Rice

Rinse the rice under cold water in a fine-mesh sieve until the water runs nearly clear (2–3 minutes) to remove surface starch.

Combine rinsed rice and 360 ml water in a medium saucepan and bring to a boil over medium-high heat. Reduce to low, cover tightly and simmer 15 minutes without lifting the lid.

Turn off heat and let rice rest, covered, 10 minutes. Meanwhile, whisk rice vinegar, sugar, and salt until dissolved.

Transfer rice to a shallow bowl, drizzle the vinegar mixture and 1 tsp neutral oil over rice. Gently fold to combine and cool slightly (5 minutes). Keep covered until serving.

Panko-Crusted Chicken

Slice each chicken thigh into 1/2-inch strips or flatten to 1/2-inch thickness if you prefer whole cutlets. Season both sides with 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder.

Set up a dredging station: bowl with flour, bowl with beaten eggs, and a shallow plate with panko breadcrumbs.

Coat each piece of seasoned chicken in flour (shake off excess), dip into beaten egg, then press into panko until evenly coated. Repeat for all pieces.

Heat a large skillet over medium heat and add 4 tbs neutral oil. When oil is shimmering, add chicken in a single layer (work in batches if necessary) and cook 3–4 minutes per side until golden brown and internal temperature reaches 74°C (165°F).

Transfer cooked chicken to a wire rack or paper towel-lined plate to drain. Keep warm in a 90°C (200°F) oven if making batches.

Once slightly cooled, slice chicken into bite-sized strips for plating (if not already sliced).

Spicy Basil Pepper Glaze

In a small saucepan or skillet over medium-low heat, warm 1 tbs vegetable oil. Add minced garlic and chopped chilies and cook 30–45 seconds until fragrant (do not brown).

Add 3 tbs Thai sweet chili sauce, 1.5 tbs soy sauce, 1 tbs oyster sauce, 1 tbs rice vinegar and 1 tsp brown sugar. Stir and simmer gently 2–3 minutes to meld and slightly thicken.

Taste and adjust heat/sweetness. Stir in 1 cup packed fresh Thai basil leaves and 1/4 tsp ground white or black pepper; cook 20–30 seconds just until basil wilts and releases aroma. Remove from heat.

Reserve about half the glaze to toss with the stir-fried vegetables; keep remaining glaze for brushing over the chicken just before serving.

Stir-fried Vegetables

Heat 1 tbs oil in a large skillet or wok over high heat until shimmering.

Add sliced garlic and stir 10–15 seconds until aromatic but not browned.

Add bell pepper, carrot, snap peas and optional baby corn. Stir-fry 2–3 minutes until vegetables are crisp-tender.

Add 1 tbs light soy sauce, 1/2 tsp sesame oil and 1/4 tsp salt. Stir to combine, then add half of the reserved basil pepper glaze. Toss quickly 30–45 seconds to coat and heat through.

Remove vegetables from heat and keep warm.

To Finish & Assemble

Place 3/4 cup of seasoned sushi rice into each serving bowl (adjust to taste).

Arrange a portion of the glazed stir-fried vegetables beside the rice.

Lay sliced panko-crusted chicken over or next to the rice. Brush the remaining spicy basil pepper glaze generously over the chicken so it glazes the crust (do this just before serving to keep crispness).

Garnish each bowl with 1–2 tbs fresh basil leaves, sliced scallions, a sprinkle of toasted sesame seeds, and a lime wedge. Add chili flakes or extra sliced chilies if you want more heat.

Serve immediately so the chicken stays crisp. Squeeze lime over the bowl to taste before eating.
