Marinate the Chicken Wings
In a large bowl, pour 2 cups of buttermilk over the 8 pieces of chicken wings. Make sure they are well coated. Cover the bowl and place it in the refrigerator to marinate for at least 1 hour or up to overnight for the best flavor.

Prepare the Coating
In another bowl, mix together 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp of garlic powder, 1 tsp of onion powder, 1 tsp of paprika, 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of cayenne pepper. This will be your dry coating for the wings.

Heat the Oil
In a large pot or deep fryer, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken Wings
Remove the chicken wings from the buttermilk, allowing any excess to drip off. Dredge each wing in the flour mixture, ensuring they are fully coated. Shake off any excess flour.

Fry the Chicken Wings
Carefully place the coated chicken wings in the hot oil, frying them in batches if necessary to avoid overcrowding. Fry for about 10-12 minutes or until golden brown and cooked through. Use a meat thermometer to ensure they reach an internal temperature of 165°F (74°C).

Drain and Serve
Once fried, remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with the poblano ranch sauce.

Roast the Poblano Pepper
Over an open flame or under a broiler, roast the poblano pepper until the skin is charred and blistered. Place it in a bowl and cover with plastic wrap to steam for about 10 minutes. Once cooled, peel off the skin, remove the seeds, and chop finely.

Mix the Sauce
In a mixing bowl, combine the chopped roasted poblano pepper, 1 cup of ranch dressing, 2 tablespoons of lime juice, 1 tablespoon of chopped cilantro, and 1 tsp of salt. Stir until well blended and adjust seasoning to taste.

Cover the poblano ranch sauce and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
