Combine Tamarind and Water
In a mixing bowl, combine 1 cup of tamarind paste with 1 cup of water. Stir well to dissolve the tamarind paste completely.
Add Dry Ingredients
Add 1 tablespoon of brown sugar, 1 teaspoon of salt, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 0.5 teaspoon of red chili powder, and 0.5 teaspoon of black salt to the tamarind-water mixture. Mix thoroughly until the sugar and salts dissolve.
Simmer the Mixture
Transfer the mixture to a small saucepan and bring it to a gentle simmer over medium heat. Allow it to simmer for about 10 minutes, stirring occasionally, until the chutney thickens slightly.
Add Fresh Cilantro
Once the chutney has thickened, remove it from the heat and stir in 2 tablespoons of chopped fresh cilantro. Allow it to cool to room temperature.
