Rinse the Rice

Thoroughly rinse 1 cup of basmati rice under cold water until the water runs clear. This helps remove excess starch.

Soak the Rice

Soak the rinsed rice in water for at least 30 minutes. This helps the rice cook evenly.

Cook the Rice

In a large saucepan, bring 4 cups of whole milk to a boil over medium heat. Add the soaked and drained rice to the boiling milk.

Add Sugar and Cardamom

Stir in 3 tablespoons of sugar and the crushed cardamom pods. Reduce the heat to low and let it simmer, stirring occasionally.

Simmer the Kheer

Cook the mixture for about 30-40 minutes or until the rice becomes soft and the kheer thickens to your desired consistency.

Prepare the Garnish

In a small pan, lightly toast the chopped almonds, cashews, and raisins until golden brown. This enhances their flavor.

Serve the Kheer

Once the kheer is done, remove it from the heat. Let it cool slightly before serving. Top with the toasted nuts and raisins.
