For the Battered Fish

Prepare the Batter
In a large bowl, mix together the flour, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until the batter is smooth and free of lumps. Let it rest for 15 minutes.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for perfect frying.

Batter and Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil, frying in batches for about 4-5 minutes until golden brown and crispy. Remove and drain on paper towels.

Heat the Oil for Frying
In another pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Fry the potato strips in batches for about 5-7 minutes until golden and crisp. Remove them and drain on paper towels. Sprinkle immediately with salt.

Mix the Ingredients
In a small bowl, combine the mayonnaise, chopped pickles, capers, lemon juice, and parsley. Mix well and adjust salt to taste. Refrigerate until ready to serve.
