Crust Preparation

Combine Ingredients
In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.

Press Into Pan
Press the mixture into the bottom of a 9-inch springform pan evenly to form the crust. Make sure to compact it well.

Bake Crust
Preheat the oven to 350°F (175°C). Bake the crust for 8-10 minutes or until slightly golden. Remove and let cool.

Mix Cream Cheese
In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer on medium speed.

Add Sugar and Sour Cream
Gradually add the granulated sugar to the cream cheese, mixing until fully combined. Add the sour cream and vanilla extract, and mix until smooth.

Incorporate Eggs
Add the eggs, one at a time, mixing on low speed just until each egg is incorporated. Be careful not to overmix.

Pour Filling
Pour the filling mixture over the cooled crust in the springform pan, smoothing the top with a spatula.
Baking

Bake Cheesecake
Lower the oven temperature to 325°F (160°C) and bake the cheesecake for about 50-60 minutes or until the edges are set and the center is slightly jiggly.

Cool and Chill
Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight before serving.
