Preparation

    Prepare the Brisket

    If not already done, shred or chop the brisket into small, bite-sized pieces. Make sure it's tender and flavorful.

    Slice the Jalapeños

    Wash and slice the jalapeños into thin rings. Remove seeds for a milder taste, if desired.

Cooking

    Heat the Tortilla

    In a large skillet over medium heat, place one flour tortilla and allow it to warm for about 30 seconds.

    Add the Filling

    On one half of the warmed tortilla, layer 1/2 cup of shredded cheese, followed by 1/2 cup of brisket, and a generous sprinkle of sliced jalapeños.

    Fold the Quesadilla

    Carefully fold the tortilla in half to cover the filling. Press down gently to help the cheese melt and hold the contents together.

    Cook the Quesadilla

    Cook for approximately 2-3 minutes on one side until the cheese begins to melt and the tortilla is golden brown. Flip and cook the other side for another 2-3 minutes.

    Repeat for Remaining Quesadillas

    Repeat the process with the remaining tortillas and filling ingredients, adding more cheese and brisket as needed.

Serving

    Slice and Serve

    Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Slice into wedges and serve with optional sour cream, salsa, and chopped cilantro on the side.
