    Heat the Milk

    Pour 4 liters of fresh milk into a large pot. Slowly heat the milk to 32°C (90°F) over medium heat, stirring gently to prevent it from scorching.

    Add Citric Acid

    Once the milk reaches the desired temperature, add 1 tablespoon of citric acid dissolved in a small amount of water. Stir gently for a few seconds to mix.

    Add Rennet

    Dilute 1 teaspoon of rennet in a small amount of cool, non-chlorinated water. Add it to the milk and stir gently for about 30 seconds. Then stop stirring and allow the milk to sit undisturbed for 5-10 minutes until it curdles.

    Cut the Curd

    After the curds have formed, use a slotted spoon to cut the curd into small cubes (about 1 inch). Let the curds rest for 5 minutes.

    Heat the Curds

    Gently heat the curds to 40°C (104°F) while stirring gently. This should take about 10 minutes.

    Drain the Whey

    Using a slotted spoon, carefully transfer the curds to a bowl lined with cheesecloth, allowing the whey to drain off.

    Knead the Cheese

    Gather the cheesecloth around the curds and squeeze out excess whey. Transfer the curds to a clean surface and sprinkle with 2 tablespoons of salt. Knead the cheese until it is smooth and elastic, about 10 minutes.

    Shape the Mozzarella

    Form the mozzarella into balls or logs, and place them in a bowl of ice water to cool and firm up.
