Method
Dough Preparation
Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Mix well to ensure the salt is evenly distributed.
Combine Ingredients
Create a well in the center of the flour mixture and add the frothy yeast mixture along with olive oil. Mix until a dough begins to form.
Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until it is smooth and elastic.
First Rise
Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
Assembling and Baking
Preheat Oven
Preheat your oven to 475°F (245°C) and place a pizza stone inside if you have one.
Prepare the Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Divide it into two equal portions for two pizzas.
Shape the Pizza
Roll out one portion of the dough into a 12-inch round shape, about 1/4 inch thick. Transfer it to a pizza peel or baking sheet.
Add Sauce and Toppings
Spread half of the tomato sauce evenly over the dough. Sprinkle half of the mozzarella cheese and top with half of the pepperoni slices. Add fresh basil leaves and a sprinkle of red pepper flakes.
Bake the Pizza
Carefully slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake for 12-15 minutes or until the crust is golden and the cheese is bubbly.
Serve
Remove the pizza from the oven, let it cool for a few minutes, then slice and serve hot. Repeat with the second portion of dough and remaining toppings.
