Pastry Shells
Prepare the Dough
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, and salt. Make a well in the center, and add the egg, white wine (or vinegar), and melted butter. Mix until the dough comes together.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.
Roll and Cut the Dough
After resting, roll out the dough to about 1/8 inch thickness. Cut into rounds or rectangles about 4 inches in size.
Shape the Shells
Wrap each cut dough piece around a cannoli form (or metal tube) and seal the edges with a bit of water.
Fry the Shells
Heat oil in a deep frying pan over medium heat. Carefully fry the wrapped dough until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Filling
Prepare the Filling
In a bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
Add Chocolate Chips
Fold in the mini chocolate chips into the ricotta mixture until evenly distributed.
Fill the Shells
Once the pastry shells are completely cooled, pipe or spoon the filling into each shell, filling them generously.
Serve
Dust the filled cannoli with powdered sugar before serving for an extra touch of sweetness.
