Preparation of Base

Mix Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot, but not boiling.

Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture becomes pale and slightly thickened.

Cook the Mixture
Cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 5-10 minutes.

Add Vanilla
Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.

Chill the Base
Once cooled, cover and refrigerate the base for at least 4 hours or overnight for best results.
Churning and Flavoring

Churn the Base
Pour the chilled base into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Add Flavorings
If desired, mix in any additional flavorings such as cocoa powder, fruit puree, chocolate chips, nuts, or coffee during the last few minutes of churning.

Transfer to Container
Once churned, transfer the gelato to an airtight container.

Freeze the Gelato
Cover and freeze for at least 2 hours or until firm before serving to enhance the texture.
