Dough Preparation

Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Allow it to sit for about 5-10 minutes until foamy.

Mix the Dough
In a large mixing bowl, combine the flour and salt. Create a well in the center and add the activated yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Knots
Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a rope about 10 inches long, then tie into a knot.

Place the knots on a baking sheet lined with parchment paper, cover, and let them rise for another 30 minutes.
