Method

Preparation and Baking

  1. 1

    Prepare the Filling

In a skillet, heat the olive oil over medium heat. Add finely chopped onion and garlic, sauté until softened.

  2. 2

    Add Spinach

Add the fresh spinach to the skillet and cook until wilted. Season with salt and black pepper. Remove from heat and let cool slightly.

  3. 3

    Mix with Feta

Once the spinach mixture is cool, crumble the feta cheese into the skillet and mix well. Set aside.

  4. 4

    Prepare Filo Pastry

Preheat your oven to 180°C (350°F). Lay out one sheet of filo pastry on a clean surface, brush lightly with olive oil, and layer another sheet on top. Repeat for 4-5 sheets.

  5. 5

    Fill and Roll

Place a generous amount of the spinach and feta filling along one edge of the layered filo. Roll up tightly into a log shape and place seam-side down on a baking sheet.

  6. 6

    Bake

Brush the top of the borek with olive oil and bake in the preheated oven for 25-30 minutes, or until golden and crispy.

  7. 7

    Serve

Once baked, allow to cool slightly, slice, and serve warm.
