    Prepare the Syrup

    In a saucepan, combine the sugar, water, honey, and ground cinnamon. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce heat and let simmer for about 10 minutes. Remove from heat and stir in the vanilla extract. Set aside to cool.

    Prepare the Phyllo Dough

    Preheat the oven to 350°F (175°C). Melt the unsalted butter in a saucepan. Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out.

    Assemble the Baklava

    Brush a 9x13 inch baking dish with melted butter. Place one sheet of phyllo dough in the bottom of the dish and brush with more butter. Repeat this process, layering and buttering a total of 8 sheets. Spread a layer of chopped pistachios over the phyllo. Continue to layer 4 sheets of phyllo with butter, then another layer of pistachios. Repeat until all ingredients are used, finishing with about 8 layers of phyllo on top.

    Bake the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes. Bake in the preheated oven for about 45-50 minutes or until golden brown.

    Soak in Syrup

    Once the baklava is baked, immediately pour the cooled syrup over the hot baklava. Allow it to soak for at least 4 hours or overnight for the best flavor.
