Prepare the Grape Leaves
If using fresh grape leaves, blanch them in boiling water for 2-3 minutes until soft. If using jarred leaves, rinse them thoroughly to remove excess brine.

Make the Filling
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the rice and stir for a couple of minutes, then add 1 cup of water or broth. Bring to a boil, cover, and reduce to a simmer until rice is cooked (about 15 minutes). Remove from heat and let cool.

Combine Ingredients
In a large bowl, combine the cooked rice, parsley, dill, salt, black pepper, lemon juice, and remaining olive oil. Mix well.

Stuff the Grape Leaves
Place a grape leaf on a flat surface, veiny side up. Add about 1 tablespoon of the rice mixture near the stem end. Fold the sides over the filling and roll tightly from the stem end to the tip. Repeat with remaining leaves and filling.

Cook the Stuffed Grape Leaves
Layer the stuffed grape leaves in a pot. Add the remaining water or broth to cover them. Place a plate on top to keep them submerged. Cover and simmer on low heat for about 40-50 minutes until the leaves are tender.

Serve
Let cool slightly before serving. Drizzle with additional lemon juice and serve with yogurt or tzatziki if desired.
