    Blend Ingredients

    In a food processor, combine the chickpeas, celery, parsley, green onions, garlic, cumin, coriander, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.

    Add Flour and Baking Powder

    Transfer the blended mixture to a bowl. Stir in the flour and baking powder until the mixture holds together. If it's too wet, add a bit more flour.

    Chill the Mixture

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to firm up the mixture.

    Shape Falafels

    Once chilled, take small portions of the mixture and form them into balls or patties, about the size of a golf ball.

    Heat Oil

    In a large skillet, heat the oil over medium-high heat until hot.

    Fry Falafels

    Fry the falafels in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes on each side until golden brown and crispy.

    Drain and Serve

    Remove the falafels from the oil and drain on paper towels. Serve warm with your choice of dipping sauce or in pita bread with vegetables.
