Prepare the Rice Pilaf
In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of uncooked rice and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Sauté the Chicken
While the rice is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 2 cups of diced chicken breast and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

Combine Ingredients
Add the cooked chicken back into the skillet with the sautéed vegetables. Stir in the diced tomatoes, soy sauce, chicken broth, salt, and black pepper. Cook for another 5-7 minutes, allowing the flavors to meld together.

Serve
Fluff the rice with a fork and serve the sautéed chicken and vegetables over a bed of rice pilaf. Enjoy your meal!
