    Prepare the Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.

    Add Carrots and Garlic

    Stir in the diced carrots and minced garlic. Cook for another 3-4 minutes until the carrots begin to soften.

    Combine Remaining Ingredients

    Add the diced potatoes, chopped tomatoes, green peas, vegetable broth (or water), salt, black pepper, oregano, and cumin. Stir well to combine.

    Cook the Mixture

    Bring the mixture to a boil. Reduce heat to low, cover, and let it simmer for about 25-30 minutes or until the potatoes and peas are tender.

    Prepare the Rice Pilaf

    While the vegetable mixture is cooking, rinse the rice in cold water until the water runs clear. In a separate pot, bring 3 cups of water to a boil. Add the rinsed rice and a pinch of salt. Cover and reduce heat to low, cooking for 15-18 minutes until the rice is fluffy.

    Serve

    Once both the vegetable mixture and rice are cooked, serve the Bezelye Pilav on a plate with a generous scoop of rice pilaf on the side.
