1. Prepare the Rice
In a medium pot, bring 4 cups of water to a boil. Add the long grain rice and a pinch of salt. Reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed. Fluff with a fork.
2. Make the Glaze
In a small saucepan, combine honey, soy sauce, minced garlic, and grated ginger. Bring to a simmer over medium heat, stirring occasionally, until slightly thickened, about 5 minutes. Remove from heat.
3. Grill the Salmon
Preheat the grill to medium-high heat. Brush the salmon fillets with vegetable oil and season with salt and pepper. Grill the salmon for about 4-5 minutes per side, basting with the honey glaze during the last couple of minutes of cooking.
4. Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add bell peppers, zucchini, and carrots. Sauté for 5-7 minutes until the vegetables are tender but still crisp. Season with salt and pepper.
