Prepare the Ingredients

Dice the jalapeño, tomato, onion, and chop the cilantro. Set aside.

Whisk the Eggs

In a bowl, whisk the eggs until well combined and season with salt and pepper.

Cook the Omelet

Heat a non-stick skillet over medium heat. Pour in the whisked eggs and allow them to cook undisturbed for about 2 minutes.

Add Filling

Once the edges of the omelet start to set, add the jalapeño, cilantro, tomato, onion, and tortilla strips to one half of the omelet. Sprinkle the shredded Monterey Jack cheese on top.

Fold and Finish Cooking

Carefully fold the omelet in half over the filling. Cook for another 1-2 minutes until the cheese is melted and the eggs are cooked through.

Transfer the omelet to a plate, drizzle with spicy chipotle sauce, and serve immediately.
