Cooking Instructions
1. Prepare the Pasta
In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.
2. Prepare the Chicken
Preheat the oven to 400°F (200°C). Season the chicken breasts with salt and black pepper.
3. Bread the Chicken
In a shallow bowl, whisk the eggs. In another bowl, combine the breadcrumbs and grated Parmesan cheese. Dip each chicken breast in the egg, then coat with the breadcrumb mixture, pressing to adhere.
4. Cook the Chicken
In a large oven-safe skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through.
5. Add Cheese and Marinara
Remove the chicken from the oven. Top each chicken breast with shredded mozzarella cheese and pour marinara sauce over the top. Return to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
6. Serve
To serve, place a portion of cooked linguine on a plate, top with a chicken breast and spoon additional marinara sauce over the top. Enjoy!
