Prepare the Turkey
Preheat the oven to 325°F (165°C). Remove the turkey from the refrigerator and let it sit at room temperature for 30 minutes. Pat dry with paper towels.

Season the Turkey
Rub the turkey all over with olive oil, then season generously inside and out with salt and black pepper. Stuff the cavity with fresh rosemary and thyme.

Prepare the Stuffing
In a large bowl, combine the cornbread stuffing mix, chicken broth, diced celery, and diced onion. Mix well and spoon the stuffing into the turkey cavity.

Roast the Turkey
Place the turkey in a roasting pan and cover loosely with aluminum foil. Roast in the preheated oven for about 3 to 4 hours, or until the internal temperature reaches 165°F (75°C). Remove the foil for the last 30 minutes to brown the skin.

Rest the Turkey
Once cooked, remove the turkey from the oven and let it rest for 20-30 minutes before carving.

Make Gravy (optional)
Use the drippings from the roasting pan, add flour and chicken broth to make a gravy, seasoning to taste.
