Prepare the Batter
In a large mixing bowl, combine the flour, cornmeal, baking powder, salt, and black pepper. Mix well.

Add the Wet Ingredients
In a separate bowl, whisk together the eggs and milk. Then, add the fresh corn kernels, chopped green onions, and shredded cheddar cheese. Mix until combined.

Combine Wet and Dry Ingredients
Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat. The oil is ready when it shimmers.

Fry the Fritters
Using a 1/4 cup measure, drop the batter into the hot oil, leaving space between each fritter. Fry for about 3-4 minutes on each side or until golden brown and crispy.

Drain and Serve
Remove the fritters from the skillet and drain on paper towels. Serve hot with chipotle ranch for dipping.
