    Remove the ribeye steak from the refrigerator and allow it to come to room temperature for about 30 minutes.

    Pat the steak dry with paper towels. Season both sides generously with salt and black pepper.

    In a large skillet, heat olive oil over medium-high heat until shimmering.

    Add the ribeye steak to the hot skillet. Cook for 4-5 minutes on one side until a nice crust forms. Flip the steak and cook for another 3-4 minutes for medium-rare, adjusting the time for desired doneness.

    In the last minute of cooking, add butter and optional herbes de Provence to the skillet. Spoon the melted butter over the steak for added flavor.
