Prepare the Muffin Batter
Preheat the oven to 350°F (175°C). In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix milk, vegetable oil, vanilla extract, and egg. Combine wet and dry ingredients until just mixed.

Prepare the Muffin Tins
In a muffin tin, place a pineapple ring in the bottom of each muffin cup. Place a maraschino cherry in the center of each pineapple ring.

Bake the Muffins
Spoon the muffin batter over the pineapple rings and cherries, filling each cup about 2/3 full. Bake for 20-25 minutes or until a toothpick comes out clean.

Assemble the Sundae
Allow muffins to cool slightly before removing them from the tin. Serve warm muffins topped with a scoop of vanilla ice cream, drizzled with caramel sauce, and topped with whipped cream.
